what can i say? i miss it. through lack of a gas cooker, i learned how to cook on electric hot plates the past few decennia. and i just didn't realize how much i'd adapted to the accidental slow cooking when leaving a pot on the heat and forget about it.
now fiery gas is back in the house, i try. i try. i do try. but it's not the same. i've stopped appreciating the gassy speed. i think i may be putting back in the electrics when our kitchen will be {fully} fitted. not before a handful of years, 'm afraid... jane's corner view, francesca's hosting, anna's theme. ps - anyone any ideas on slow cooking on gas? i've tried big pot on tiny flame, that doesn't exactly work. i haven't tried a simmer plate. anyone has experience with it?

One of my uncle says that the best taste of food is done on fire, than gas, than electric!

I love, love love gas cookers, and passionately hate electric ones (how can you control the heat intensity properly? also, they take too long to heat up, and are too slow to cool down).
ReplyDeleteI guess your burners must be too big, and release too much gas, hence the flame even on low is too high. There are disk-like devices to remedy this (not sure how they work to diffuse the heat, since I have the opposite problem: pathetic little cooker with tiny burners).
But the best remedy is to keep cooking - you'll get the hang of it very soon! :)

Around me, most people prefer to cook with gas. It's a very precise cooking. The only reason that I don't cook with gas, is that I'm afraid of forgetting it and the house explodes after! ... so I continue to use my vitroceramics cooking rings ...

ReplyDeleteI love cooking over a gas flame, the heat can be controlled so well. I have never tried a simmer plate, didn't even know they existed. I've cooked on a commercial gas range for years at work and love it. At home right now I have electric and don't like it at all. You may need a heavier-bottomed pot.
ReplyDeleteI'm no help at all here! I've always cooked on an electric stove because I didn't have a gas alternative. Though I hear it's wonderful, I wouldn't know what to do!
ReplyDeleteLike Francesca I absolutely love cooking with gas - and really hate electric. Gas gives you so much more control - and it is so immediate - turn it on and it's hot! I have cooked things pretty slowly on my ancient gas hob (so ancient I need to use matches to light some of the burners because their little sparky thingy doesn't work any more!!) - although if I want to do really slow cooking I either use the oven (on very low) or I use one of those slow cooker / crock-pot things where you can put a whole pile of meat and veges in in the morning and come back home at 5pm and it's miraculously turned into a melt-in-the-mouth stew. You will love gas in the end Nadine - just keep experimenting :-)

ReplyDeleteI prefer gas now. Except for the six years living in Cincinnati, I have had gas. I much prefer it for the reasons Francesca does. I learned to adapt to the electric and then back to gas. Like Francesca said, keep practicing --you'll get the hang of it eventually. I'd carry around a timer with me until I got used to it though, so I didn't burn the place down!

ReplyDeleteI love my gas stove Nadine and have had one off and on since my teen years at Cordon Bleu, but it's true, slow cooking on gas is a bit on the tricky side unless you have the right pot. A really heavy Dutch oven, like a Le Creuset is your best bet. Otherwise, an electric slow cooker/crock pot is probable the safest idea. Hope you're ready for a lovely weekend. :)

ReplyDeletei grew up in a house with electric hot plates, and since i moved to the netherlands and thereafter israel, i got used to cooking on gas and by now i prefer it. much more immidiate, i feel i can be more subtle and precise at the same time.
oh! I looove my gas cooker! I grew up with those and really missed when living in places without.

ReplyDeleteI prefer gas to electric. I only used cast iron and these Kitchenaid pots I once had. They all worked really well. My cast iron Dutch oven did so well for slow cooking. I love that photo! I still think you were a bit too close :)

ReplyDeleteI used to live in a house that was mainly heated with wood. I used to have a wood-heated owen and I do miss that a lot. The warmth it gave and the food had a perfect taste.
I also had a stove that was heated by wood, and cooking truly was full of feeling! It was so brilliant to learn how to master cooking with wood-heated stove. Real fire, it does have something!
when we put in the new kitchen about a year ago one of the few things I was sure about was the gas and I am still very happy with it :)
