scrumptious little fruitcake, fresh from the oven. oh, and it is dead easy to make. all you need is a little time on your hands, but you can do plenty other things in the kitchen while you are making this cake. to find out about nigella's recipe... {jane's corner view, francesca's hosting, tera's theme.}
simply place three clementines (you can substitute the clementines by lemons or oranges) in a pan with water and bring them to the boil. they'll need two hours (make sure the water doesn't dry up). cool the babies and remove pips before blitzing all of them down to a pulp. take a springform tin, grease it, set aside and preheat your oven to 190°.
in your food processor now add 250 gr ground almonds, 1 teaspoon of baking powder (if you prefer, add the equivalent of natural yeast), 225 gr sugar (i use less) and 6 eggs (again, i use less, max 4). mix together (or you can use a bowl if that better suits your kitchen attitude).
pour this mixture in the tin and bake for an hour, when a skewer will come out clean. maybe you'll need to cover the batter with greaseproof paper somewhere along the baking time, to stop the top from burning. removing the cake from the oven, let it cool down on a rack a bit, then turn it out on the rack and further let it cool down. you can keep the cake for a few days. smakelijk.

I feel a bit guilty because my Corner View is about home-made muffins - but I didn't share the recipe because I'd completely forgotten where I got it from (it was a while ago I baked these muffins - not enough baking going on in my house right now!)
